Witlof With a Light Tomato Sauce (V)

Witlof is the new vegetable for 2017. What ‘n wonderful product and so versatile. Whether you use it salads or the famous Belgian dish – Witlof au Gratin (Witlof wrapped in Parma ham) start experimenting with this wonderful product. Witlof is available throughout the year at Woolworths, Checkers, Food Lovers Market and quality groceries.   Serves 2

Preparation time 10 minutes

Cooking time 55 minutes

Ingredients

  • 60 ml olive oil
  • 30 ml white wine
  • 15 ml tomato purée
  • 2 ml sugar
  • 1 bay leaf
  • 1 thyme sprig
  • 1 clove of garlic, crushed
  • salt and freshly grounded black pepper
  • 250 ml water
  • 2 witlof
  • 5 ml lemon juice
  • 15 ml chopped parsley

Put oil, wine, purée, sugar, bay leaf, thyme, garlic and water in saucepan. Season with salt and pepper. Bring to boil and cover with lid. Let it simmer for 5 minutes. Place Witlof in sauce and cover with lid. Let it simmer for 45 minutes. Take Witlof out of sauce and add lemon juice. Let it simmer uncovered till a syrupy consistency. Pour over Witlof and sprinkle with chopped parsley.  Serve warm.
